INGREDIENTS

  • 1 Kcal Olive Oil Spray

  • 70ml Coconut Oil

  • 30g Oats

  • 240g Wholemeal Flour

  • 150g Honey

  • 2 x Large Eggs

  • 3 x Bananas, mashed

  • 60ml Milk

  • 1/2 x Tsp Cinnamon

  • 1 x Tsp Vanilla Extract

  • 1 x Tsp Baking Soda

  • 1/2 x Tsp Salt

INSTRUCTION

Preheat oven to 175°C. Grease a muffin tin with 1 kcal olive oil spray. Whisk together 70ml coconut oil, 150g honey, 2 x eggs, 3 x mashed banana & the 60ml milk. Then whisk in 1/2 tsp cinnamon, 1 x tsp vanilla extract, 1 x tsp baking soda & 1/2 tsp salt. To finish add the oats and wholemeal flour and mix in with a whisk. Spoon out into the muffin cups and top with a sprinkle of oats. Bake in the oven for 25 mins.
