INGREDIENTS

  • 4 x Salmon Fillets

  • 1 x Tbsp Olive Oil

  • 240g Romaine Lettuce, chopped

  • 110g Onion, thinly sliced

  • 220g Cucumber, thinly sliced

  • 1 x Avocado

  • 55g Lime Juice (1.9 oz)

  • 1 x Tsp Dijon Mustard

  • Salt and Pepper to season

INSTRUCTION

Preheat a grill. Brush each side of the salmon fillets with the olive oil and season if desired. Grill the salmon filets on each side for 4-5 minutes, or until just cooked through. Set aside.

Build each salad starting with 60g Romaine Lettuce, top with 1/4 of the sliced onion, and 1/4 of the sliced cucumber, the grilled salmon filet and 1/4 of the sliced avocado, Repeat for remaining three salads. In a small bowl, whisk together the lime juice, olive oil, Dijon mustard, salt and pepper. Drizzle the dressing over each salad.
