INGREDIENTS

  • 4 x Medium Sized Eggs

  • 7 x Cherry Tomatoes, halved

  • 95g Egg Whites

  • 80g Green Bell Pepper

  • 60g Spinach, finally chopped

  • 20g Green Chilli Peppers, finely chopped

  • 15g Cheddar Cheese, grated

  • 1 x Tsp Coconut Oil

  • 1 x Tsp Paprika

  • 1/2 x Tsp Oregano, dried

  • Rock Salt to season

INSTRUCTION

Preheat the oven to 150º. Lightly grease a large round ovenproof dish with coconut oil. Whisk the eggs and egg whites in a jug. Season well. Add the vegetables, dried spices and herbs. Stir well. Pour into a dish and cook for around 12-15 minutes until the centre of the mixture is cooked.
